No Crust Coconut Pie

I wanted to share this recipe for a crustless coconut pie. I've made it several times and my husband loves it.

No Crust Coconut Pie

4 eggs beaten
1 3/4 cups sugar
2 cups milk
2 tbsp margarine melted
1 tbsp vanilla
2 cups sweetened flaked coconut

Combine all ingredients in large mixing bowl. Pour into 2 9 inch pie plates. Bake at 350 degrees for 30-40 minutes or until golden brown. Refrigerate after cooling.
